Baked Cinnamon Oatmeal Recipe

Wintertime is still lingering here in Michigan, so cozy recipes are still on my mind. This baked cinnamon oatmeal fills our home with the coziest of smells. It is super cinnamon-y and sugary, and warms us up from the inside. It’s perfect to serve alongside fruit and berries, with an extra splash of milk. This baked cinnamon oatmeal fills our home with the coziest of smells.  It is super cinnamon-y and sugary, and warms us up from the inside.

We’ve been trying all sorts of new recipes since we’ve been in lock-down thanks for coronavirus. And, since it literally is still snowing outside even though it’s mid-April, cozy comfort recipes are all we crave. I couldn’t wait to try this baked oatmeal recipe from Kate from The Smalls Things Blog and add our own special twists.

Our Family’s Favorite Baked Cinnamon Oatmeal Recipe

I like to keep things simple, so when I make this oatmeal recipe I melt the butter (yes, an entire stick…mmm!) in the same pot I’m going to bake the oatmeal in. Less dishes to do is a win-win in our home.

Once the butter is melted, I then combine all of the other ingredients into the pot, starting with the oatmeal, brown sugar, and cold milk. Once the other ingredients are added, the butter is tempered enough to add the eggs without having a scrambled hot mess.

After all of the ingredients are well mixed, I pop this in the oven for 30 minutes. It smells so warm and cozy, like a perfect fall day, in my opinion. It’s bubbly and hot fresh from the oven, and is simply the perfect breakfast on a cool morning.

How To Serve This Yummy Breakfast…

We serve this oatmeal in big mugs with berries or sliced apples (which makes it taste like a breakfast apple crisp), with a splash of cool milk. It pairs wonderfully with coffee too (click here for my favorite whipped coffee recipe). You could even opt for less brown sugar, and top your baked oatmeal with a drizzle of maple syrup…that’s how Adam likes it!

Your family will devour this oatmeal recipe, I guarantee it. It is such a special treat on cool autumn or wintery days, and fills our tummies with sugary, yet nutritious goodness!
